My mom went to this restaurant on a school trip in the 60's, and loved the cake so much she asked how to make it and they gave her this recipe. Happy Baking!
LA FONDA DEL SOL MEXICAN CHOCOLATE CANDY CAKE
FOR THE BARK TOPPING:
4 squares (1 ounce each) semi-sweet chocolate
FOR THE CAKE:
Chocolate cake mix, can be boxed or your own
1 teaspoon cinnamon
FOR THE FILLING:
6 eggs (pastuerized)
1 package semi sweet chocolate chips
1 tablespoon vanilla
1/4 teaspoon salt
1/2 cup water
1 teaspoon cinnamon
2/3 cup packed brown sugar
MMAKE THE BARK CANDY FOR THE OUTSIDE FIRST:
Melt 4 squares of semi-sweet chocolate. Spread on a piece of foil on a cookie sheet. Use the entire sheet and spread across. Then freeze, the longer the better. This is what you will use to break up into pieces and cover the outside of the cake.
TO MAKE THE CAKE:
Make your chocolate cake according to package directions, adding the cinnamon. I like to cool my cake and wrap it in saran wrap and let it chi!l overnight , makes it easier to handle. As long as it is cool when you do the filling.
**this cake has 4 layers. At the restaurant the cake was square. they took 2 square cakes and sliced them in half. I don't have a square pan so I make a rectangle and cut it in 4 equal pieces and stack it.
TO MAKE THE FILLING:
Melt the package of chocolate chips and let cool.
Separate eggs. Place egg whites in a larger bowl, yolks in a smaller bowl. Add vanilla and salt to whites and beat until stiff peaks form.
Add slightly beaten yolks to melted chocolate and beat on medium speed. When beaten add 1/2 cup of water, 1 teaspoon cinnamon and beat again. Then add brown sugar, beat again. Finally, add egg whites to chocolate mixture and fold in. Chill for several hours.
TO ASSEMBLE:
Cut cakes to make 4 layers. Put filling on each layer and on top and sides. You should have a 4 layer cake now. Crumble the frozen chocolate and sprinkle over top and sides. Let chill for a few hours The longer the better. If you can chill overnight it will set nicely.
