SENSATIONAL STIR FRY
"This stir-fry is quick to make and beyond satisfying."

1/4 cup chopped broccoli
1/4 cup water
1/4 cup sliced yellow, orange, or red bell pepper
1/4 cup shelled edamame
1 tablespoon chopped onion
1/4 portobello mushroom, chopped
Sensational Stir-Fry Sauce (recipe follows)
1/4 cup cooked quinoa
Small handful basil, chopped (to garnish)
Heat a pan over high heat. Add 1/4 cup water along with broccoli. bell pepper, edamame, onion, and mushroom. Stir fry until vegetables are tender.
Once all the liquid has evaporated, add the sauce and quinoa and mix well.
Plate the stir fry and sprinkle with chopped basil.
SENSATIONAL STIR-FRY SAUCE
1 tablespoon tahini
1/2 tablespoon balsamic vinegar
1 teaspoon apple cider vinegar
Juice of 1/2 lime
1/4 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper (or to taste)
Mix all the ingredients for the sauce together.
Makes 1 serving
