Here is some information about Mealie pap that a friend of mine from South Africa emailed to me, Dean. I hope it is imformative and helps you make it.

Here is a website with South African recipes : www.3men.com/south.htm Click on Mielie Pap and Train Smash. I would like to point out that " maize meal " should be used, and NOT corn flour. You would have to find some South African source for the maize meal. My friend orders her's form Protea Imports in Canada.

The English for " mielie " in South Africa is " maize ". According to my friend, you will not be happy with the result if you use corn flour. The trick is actually in the cooking process. In my opinion you need someone to demonstrate it, to have it come out " crumbly ".
