Recipe: Mixed Spice Blend (for apple pie, cake, fruit, cookies, breads, etc.)

"The Rosemary House says, "We got the recipe from a group of church cooks who burned their mortgage by holding bake sales and offering the best apple cake in the world. This spice blend was their secret ingredient."
This superb blend is useful wherever a recipe calls for mixed spices -- apple pie, fruit cake, baked fruits, spiced cookies, tea breads, and so on. We use this all the time instead of having to carefully measure a bit of this and a hint of that."
6 teaspoons ground coriander
5 teaspoons ground cinnamon
4 teaspoons ground allspice
3 teaspoons ground nutmeg
2 teaspoons ground ginger
1 teaspoon ground cloves
Mix all spices thoroughly and keep in airtight container away from heat and light.
Makes about 1/2 cup
VARIATION:
Store spice blend in a lidded jar with a whole vanilla bean that's been slit so that the flavors blend smoothly.
