Hi,
How nice to keep contact wih your exchange student. You must have been a nice host home when she still want to visit.

If you want the Norwegian meal, it depends a little on the weather. many Norwegian meals are made for cold climate,
and tends to be rather heavy. The most typical I can think of that young people would enjoy, is
cream of mushroom soup, (for a cool day) - a shrimp salad for a hot (shrimp. lettuce, orangevedges, maybe aspargus, a lemon_lime dressing or a creamy one)
plain salt and pepper pork chops with potato-salad if it is hot, or potatovedges fried golden in the oven if its cool. and salad,
a fresh fruit salad with whipped cream, (called heavenly hash)
or a caramel custard or a flan. That will be a very Norwegian meal.

Most Norwegian young people don't use starters for dinner, but more often than not have only one course. They travel a lot, and eat food from very many different countries. The "native Norwegian" part lies in the ingredients, and that is too difficult to obtain.

I asked my daughter of 20 what she thought her friends would think was a nice meal, and she said : Oh well, they will want Italian lasagna or pizza or Mexican tacos or Greek salad, or Spanish paella or Indian chiken curry or Chinese sweet and sour pork . So -
Give them what you think is the good food of your region.

I don't have good recipes of tex mex food- maybe someone else can help you - I just notice that my daughters friends loves tacos and fajitas and chili con carne - none of which I use recipes for.
