Hi Sherri;
Here's the recipe from a cookbook titled Mud Pies and Silver Spoons, illustrated by Pulitzer Prize winning cartoonist Mike Peters, with Foreword by Erma Bombeck. Published by the Dayton Philharmonic Women's Association.
The womens auxiliary of one of the local hospitals makes these every year for their annual Christmas bazaar, they sell hundreds of pounds of them.
OHIO BUCKEYES
1 pound margarine
3 pounds powdered sugar
2 pounds peanut butter (not crunchy)
12 oz. chocolate chips
2/3 block food grade paraffin
Melt margarine and cool. Add powdered sugar and peanut butter and mix well.
Roll into 1-inch balls; chill.
Melt chocolate chips and paraffin in double boiler. Pick up chilled balls with a toothpick and dip in chocolate, leaving tops uncovered. (They will look just like buckeyes from the buckeye tree, if you have ever seen those) Press toothpick holes with thumb to cover holes.*
Place on waxed paper, uncovered side up. When chocolate hardens, store in airtight containers in fridge. These freeze very well.
Makes 250 candies
*NOTE: Take chilled balls out of fridge just a few at a time to do the dipping. The toothpick will hold better if they are really cold.
