Potato Candy

The way I make Potato candy, is I take a medium potato, I peel it and I boil it until tender. I then take the potato and put it a mixing bowl. I then add a little vanilla and a pat of butter, and a small pinch of salt. I then whip the hot potato and other ingredients together and as it turning around, I add powdered sugar (confectionary sugar)and I keep adding the sugar until this forms a soft dough (careful to not add too much powd. sugar so it won't be too dry) It's okay to be a bit moist, but not gloopy. I then take some wax paper and I sprinkle powdered sugar on the was paper and then take a small amount of the candy dough and put in on the wax paper. I then take a rolling pin and cover that with powdered sugar so the candy won't stick to it. I roll it like you do sugar cookie dough. I then spread smooth and creamy peanut butter on top and then roll it like a jelly roll. Then take this and put it on a lightly greased cookie sheet and then while I make the rest of the candy dough, I take a moist paper towel and cover the candy rolls so they won't dry out. When I am done, I put everything in the refrigerator. In a few hours, remove from the refrigerator and then cut into little swirls. You must store this properly so it won't dry out. You can put it in a container between layers of wax paper and cover tightly.
