Recipe: Red Bud Cove Stuffed Ham Rolls with Cheese Sauce

"Each year, I try out new recipes so I can add a few to my repertoire. About five years ago, I tried Stuffed Ham Rolls with Cheese Sauce. The recipe was great, but I wasn't sure just how good a recipe it ! was for breakfast. That is until I started getting requests for the ham rolls when my guests were making I return visits. This is now our most requested recipe, and I now feel confident that it is a good breakfast .I dish. I serve it with a hash brown potato casserole." - Red Bud Cove Bed and Breakfast Suites
2 packages (10 ounces each) frozen, chopped spinach, thawed
2 cups sour cream
2 cups prepared cornbread stuffing
24 slices thin deli sliced ham
Cheese Sauce (recipe follows)
Shredded/grated Parmesan cheese
Paprika
Cook spinach until thawed; drain. Set aside.
Combine sour cream, stuffing and spinach; mix well. Spread a heaping tablespoon of spinach mixture on each ham slice. Roll the ham slice and place seam side down in large casserole dish, leaving a little space between every two rolls. (You can use individual au gratin dishes, if you wish.)
Cover the ham rolls with cheese sauce, being sure to cover all exposed ham to avoid crisping the ham during baking. Sprinkle with Parmesan cheese and paprika. Cover with aluminum foil.
Bake at 350 degrees F for 20 minutes covered, then an additional 10 minutes uncovered.
CHEESE SAUCE
1/2 cup butter
1/2 cup flour
4 cups milk
1 to 2 cups grated Cheddar cheese
1 medium mixing bowl
Melt butter in saucepan. Add flour; blend well until smooth. Add milk 2 cups at a time and stir until thick. Add cheese and immediately remove from heat. Stir until well blended and smooth.
Makes 12 servings (2 ham rolls each)
