Hi Barbara,

Partially cooking your apples before stuffing should help. Core them, place top-down in a dish with a little water in the bottom. Pre-cook in the microwave for a minute at a time (it will depend on the size and number of apples) until crisp-tender. Rotate each apple during the process for even cooking. You can probably store the apples at this stage until you're ready to complete the recipe (if refrigerated, bring to room temp. before cooking).

As far as the original recipe not cooking the apples through, it could be due to the size of the apples or number of apples being cooked at one time. Or, maybe the wattage of your oven is less than the original recipe was tested in.
