BLUE CHEESE WALDORF SALAD
FOR THE CLASSIC BLUE CHEESE DRESSING:
1/3 cup plain fat-free yogurt
1 tablespoon reduced-fat mayonnaise or salad dressing
1 tablespoon finely crumbled blue cheese
FOR THE SALAD:
Lemon juice
4 medium unpeeled red eating apples, cut into 1/4-inch slices
2 cups tightly packed spinach leaves
2 medium celery stalks, thinly sliced (1 cup)
2 tablespoons chopped walnuts, toasted
TO MAKE THE CLASSIC BLUE CHEESE DRESSING:
Mix all ingredients. Cover and refrigerate at least 1 hour to blend flavors.
TO MAKE THE SALAD:
Sprinkle lemon juice over apple slices. Toss apples and spinach in large bowl.
Spoon dressing over salad. Sprinkle with celery and walnuts.
