re: chocolate for candy

Liz, I'd recommend doing some research at your local library. There are bound to be books on candy making there. Tempering probably will be an indispensible step, and you will want to use the best chocolate you can afford.

Rose Levy Beranbaum's excellant book, The Cake Bible, includes a discussion on types of chocolate plus addresses and phone numbers for distributors.
