CRISP MOLASSES COOKIES
1 3/4 cups flour
1/4 teaspoon salt
2 tablespoons vegetable shortening
2 tablespoons sugar
1/2 cup molasses
3/4 teaspoon baking soda
3 tablespoons warm water
Preheat oven to 350 degrees F. Lightly grease cookie sheets.
Combine flour and salt; set aside.
In a large bowl, cream the shortening and sugar. Beat in the molasses.
Dissolve the baking soda in the warm water and add to the molasses mixture, beating until smooth. Gradually blend in the dry ingredients.
On a floured surface, roll out the dough to a thickness of 1/4-inch. Using cookie cutters, cut out shapes and place 1-inch apart on prepared cookie sheets.
Bake for 8-10 minutes, until lightly colored and firm to the touch. Transfer to wire racks to cool.
