re: Frog Eye Salad without eggs - how about?

Since the flour, sugar, pineapple juice (&egg) mixture is cooked until thickened I think you could just substitute with some vanilla pudding. I'd just use 2-3 of the little individual cups of pre-made vanilla pudding & stir in some of your drained pineapple juice (to taste). Then proceed with the rest of the recipe.
