HOMESTYLE LASAGNA
1 lb lasagna noodles
1 lb hamburger, cooked and drained
1 cup chopped onion
1 cup chopped green bell pepper
1 cup coarsely chopped mushrooms
1/4 cup of sugar, or to taste (optional)
1 cup diced fresh tomatoes
1 (16 oz) container cottage cheese
1 (16 oz) jar Ragu (tomato sauce)
8 cups shredded mozzarella cheese (or to taste)
Cook lasagna noodles according to package directions; drain.
Saute the hamburger in a Dutch oven; drain. Add onion, bell pepper, and mushrooms and saute until the vegetables are just softened. Add the sugar (if using) and heat until dissolved. Stir in the diced tomatoes and remove from heat. Mix in the cottage cheese.
Put a single layer of the cooked noodles in a casserole dish. Spread a layer of the hamburger mixture on top of the noodles, then some of the sauce. Continue till the casserole dish is full, ending with a layer of sauce. Top with mozzarella.
Bake at 350 degrees for 30-40 minutes or until bubbling and cheese is lightly browned. Remove from oven and let stand 15 minutes before cutting.
Serve with side salad and French cheese bread. Don't forget the ice tea.
