re: Pectin in Peaches

In North Carolina we often can what we call "Peach Honey" basically, it's fresh peaches and alot of sugar cooked down to a somewhat think syrup. The normal recipe dosen't call for any pectin, but some of us do use a small amount depending on how think you like it. Try it on toast / biscuits / BP&J sandwiches / etc...
