Desserts - Cookies, Brownies, BarsSLICE OF SUMMER BROWNIE
3/4 cup (1 1/2 sticks) butter or margarine, melted
1 1/2 cups sugar
1 1/2 teaspoons vanilla extract
3 eggs
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1 container vanilla frosting (about 1 1/2 cups)
Green and red food color
Semi-sweet chocolate chips or mini chips
Heat oven to 350 degrees F. Foil-line a 12-inch round pizza pan or disposable pan; grease the foil. If using disposable pizza pan, place on cookie sheet to bake.
Using a spoon, beat melted butter, sugar, vanilla and eggs in large bowl. Stir in flour, cocoa powder, baking powder and salt until well blended. Spread into pan.
Bake 20 to 25 minutes or until top springs back when touched lightly. Cool completely.
Stir several drops green food color into 1/2 cup frosting; spread on outer 1 1/2 inches of brownie to form green rind.
Place 1/4 cup vanilla frosting in corner of closeable plastic bag; snip a tiny piece from corner. Pipe band of white rind next to green rind.
Stir together remaining frosting and red food color to form pink melon; spread inside entire middle. Place chips in rows as "seeds." Cover, refrigerate until firm. Serve, cut into wedges.
