Hi,

Dried herbs don't pose a problem to canning as they are dried. The water has been removed.

I have searched through my MFP manual to check the charts there. It deals mostly with meats, fish and starchy veggies; no peppers or onions. Cruised the Ball Blue book too. Checked some of my cookbooks for sauce recipes just to get an idea of what kinds of unusual ingredients you might be refering to. I can't answer your question regarding unusual ingredients...truthfully I don't think your local cooperative extension office will have the answers either, but you can give them a call.

One veggie that didn't show up in my Ball Blue Book, but did show up on my manual chart was mushrooms....

Less than 3000 ft. altitude....25 minutes

Over 3000 ft. altitude altitiude.....40 minutes

Over 7000 ft. altitude.....60 minutes
