I haven't lived near an Olga's in about 8 years - but their food was very good. I don't remember any mushrooms in theirs .... but if you like them, would make a good addition. I always put some ricotta cheese in with the other cheese (and have a feeling that Olga does also - or else cottage cheese that she's processed to smooth) -- as I remmeber hers as being a bit creamier than some.
