Recipe: Pasta in Paradise (using papaya and mango, serves 2)

PASTA IN PARADISE

4 ounces uncooked vermicelli, rice noodles or spaghetti
1/4 cup red or yellow bell pepper strips
1 cup ripe chopped papaya
1 cup ripe chopped tomatoes
1/2 cup ripe, chopped mango
2 tablespoons chopped fresh cilantro or flat-leafed parsley
2 teaspoons olive oil
1/4 teaspoon ground cinnamon
1 1/2 teaspoon white pepper
2 tablespoons chopped peanuts

Cook pasta according to package directions.

Meanwhile, in a large bowl, combine pepper, papaya, tomatoes, mango, cilantro, oil, cinnamon and pepper. Toss to mix.

Drain pasta, rinse with cold water and drain again. Add to bowl and toss. Top with peanuts.

Makes 2 servings
