Substitute for sour cream

Hi Gina,
I just came across your Rosh HaShana recipes because I was away for Rosh Hashana and my flight back to FL was cancelled. I'd like to ask about the spinach noodle kugel: is there anything I could substitute for the sour cream in the recipe? My son-in-law would refuse to eat a dish with dairy products in them if he is eating a meat meal. I've found that there usually is a substitute for the dairy product that does not change the flavor or texture.
