I make a sweet pickle, that is put in the fridgerator after brining and soaking in vinegar, etc. It is layered with sugar until they are covered with juice, at this point, I take them out, drain and heat the juice, pack the pickles in jars, seal, heat in water bath for 10 minutes, and they last for a couple years or until they are eaten up.

I hope this helps, if you need the recipe, let me know. My mother-in-law and all her friends, leave this same pickle in a gallon jar on their counter top all year and use them as needed. I am still not convinced about that procedure, but she will soon be 93 years of age, and most of her friends are in their late 70's or 80's.
