Recipe: Plain Omelet for One with 8 Variations (Waring blender recipe, 1960's)
Breakfast and BrunchPLAIN OMELET FOR ONE WITH 8 VARIATIONS

2 eggs
1 tablespoon water
Salt and pepper, to taste
1 tablespoon plus 1 teaspoon butter, divided use
Place eggs, 1 tablespoon water, salt and pepper in blender container. Cover and blend on high speed for 3 seconds.
TO COOK AN OMELET -
FRENCH MANNER:
In a small frying pan heat 1 tablespoon butter. When butter begins to brown, pour in egg mixture and stir rapidly with a fork until mixture begins to set. Smooth surface of egg and cook until almost set. Put remaining 1 teaspoon butter in center and roll out on hot serving dish.
Double ingredients to serve 2.
VARIATIONS:
CHEESE OMELET:
Blend for 3 seconds: 2 tablespoons Sour cream, 2 tablespoons diced Cheddar cheese, 2 eggs, and salt and pepper.
COTTAGE CHEESE OMELET:
Blend for 3 seconds: 1/4 cup creamy-style cottage cheese, a thin slice onion, 2 eggs, and salt and pepper.
HAM OMELET:
Blend for 3 seconds: 2 tablespoons water, 2 tablespoons diced ham, 2 eggs, and salt and pepper.
HERB OMELET:
Blend for 3 seconds: 2 tablespoons milk, 2 tablespoons parsley clusters, 1 green onion, sliced, 1/2 teaspoon dry tarragon, 2 eggs, and salt and pepper.
MEXICAN OMELET:
Blend for 3 seconds: 1 strip crisp bacon, broken, 1 tablespoon chili sauce, 1 green onion, sliced, dash Tabasco, 2 eggs, and salt and pepper.
SHRIMP OMELET:
Blend for 3 seconds: 2 tablespoons tomato juice, 2 tablespoons diced cooked shrimp, dash Tabasco, 2 eggs, and pinch salt.
WESTERN OMELET:
Blend for 3 seconds: 2 tablespoons diced ham, 2 strips green bell pepper, 1 sliced medium onion, 1/4 ripe tomato, 2 eggs, and salt and pepper.
FILLED OMELET:
A filled omelet is a plain omelet which, when barely set, is spread with a meat or vegetable puree, rolled up, and turned out on a hot serving dish. It is usually served with a complementary sauce.
