Vienna Cake - Could be Sachertorte?
Misc.ADVERTISEMENT
Dear Lindsay,
When I read your request for a recipe for "Vienna Cake," it reminded me of "Sachertorte," a famous cake from Vienna. A recipe for it is in "The Joy of Cooking" by Irma S. Rombauer and Marion Rombauer Becker. It's not quite what you describe (it has a chocolate hard icing instead of a white one) and uses apricot preserves or jam instead of raspberry, but I bet you could easily switch the jam part. (Maybe use white chocolate instead of regular for the icing!) The recipe starts out: "Frau Sacher, one of the great personalities of Vienna, fed the impoverished Austrian nobility in her famous restaurant long after they had ceased to pay. Today she is remembered throughout the world for her chocolate torte, for which endless recipes, all claiming authenticity, abound." I don't have time to write out the whole recipe right now, but "The Joy of Cooking" should be easy to find in any bookstore. Good luck! I hope this is close to what your friend remembers!
