Well... (re: rolling truffles)

I have a truffle recipe that's very soft too but mine can still be rolled after refrigerating it overnight. I do however wear rubber gloves to roll the balls so that the heat from my hands doesn't melt the chocolate. If you'd like to try my recipe, let me know and I'll post it. Also maybe if you dropped it by spoonsful onto a cookie sheet, refrigerated them and then rolled them quickly, it would require less handling of the chocolate and make less mess. Just a guess on that though, may be worth a try. They are so pretty when rolled and dipped.
