Hi, Corky--

Wyoming is on my list of "have to see that place" list. I'm curious about what elk tastes like. Also, do you have a hunting season for it? Are they really big? The closest I've been to one is watching "Northern Exposure". :-D Looks like one would take up a whole freezer.

Sorry I couldn't help with any recipes, but let us know how you usually cook it and what it's like.
