TUNA OR SALMON BAKE
4 tbsp. butter or margarine, divided use
1/4 cup chopped green pepper
1 tbsp. flour
1 tsp. salt
Dash of pepper
1/2 cup milk
1 egg, slightly beaten
1/4 cup sour cream
1/2 cup mayonnaise
1 (16 oz.) can Chop Suey vegetables, rinsed and drained
1 (6 1/2 oz.) can tuna or salmon, drained and flaked
2 tomatoes, cut in wedges (optional)
1/2 cup crushed chow mein noodles
Melt 2 tablespoons butter margarine in saucepan; add green pepper and cook 2 minutes.
Blend in flour, salt, and pepper. Gradually add milk; cook, stirring until slightly thickened.
Blend together egg, sour cream, and mayonnaise; stir into sauce. Add vegetables and tuna or salmon.
Turn into greased 1 quart baking dish. Arrange tomato wedges on top, if using.
Bake at 375 degrees F for 25 minutes.
Melt the remaining 2 tablespoons butter in skillet and add chow mein noodles and heat until slightly browned. Sprinkle over top of baked casserole.
