Terri, Here is another dish for you and anyone else who may like to try it. It is rather yummy to my taste buds. Hope you enjoy it.

EASTERN TART

Beat - 2 eggs, then add 2 ozs sugar, & 4 tablespoons flaked rice
Stir - 2o fluid ozs milk, 8 ozs chopped dates & 1 teaspoon vanilla
Line - pie dish with 6 ozs short crust pastry
Add - filling & sprinkle with nutmeg
Bake - in a moderate oven until filling has set, & slightly browned



APRICOT AND RICE MERINGUE

Stew - 3 lbs apricots. Set aside.
Place - 3 ozs flaked rice in saucepan with 10 fluid ozs water, & cook till all
the water is absorbed.
Add - 15 fluid ozs milk. Cook till absorbed. Add 2 tablespoons sugar stir
till disolved.
Place - Apricots in a greased ovenproof dish.
Pour - on the rice topping mixture.
Whip - 2 egg whites till stiff, then fold in 2 tablespoons superfine sugar.
Spread - over rice mixture.
Cook - in a cool oven until meringue is slightly browned.
Serve - with custard made from the 2 egg yolks.
