Recipe: Pumpkin Bar Cookies with Orange Glaze (using cake mix)

PUMPKIN BAR COOKIES FROM A CAKE MIX

1 Betty Crocker Super Moist Light Yellow cake mix
1 (16 oz) can Libby's solid pack pumpkin
3 eggs (or 3/4 cup liquid egg substitute
2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves

Preheat oven to 350 degrees F. Coat a 15x8-inch jelly roll sized pan with cooking spray.

In a large mixing bowl, beat (dry) cake mix with pumpkin, eggs and spices for 3 minutes. Pour batter in prepared pan.

Bake for 23 minutes. Set pan on rack to cool.

When bars are cool and just prior to serving, frost bars with glaze. Glaze only the portion of the bars that will be eaten, as this dessert does not keep well once the glaze has been spread on.

Unfrosted bars can easily be frozen for later use.

GLAZE

1/2 cup powdered sugar
1/4 tsp orange extract
1 Tbsp milk

Combine ingredients for the glaze. Add more sugar or milk as needed for consistency.

Makes 24 bars
