Recipe: Marinated Mixed Vegetables (make ahead)

MARINATED MIXED VEGETABLES

1 very small head cauliflower, in florets
1 large package frozen lima beans, cooked 4 minutes
3 carrots, cut into rings
1 large green pepper, cut into strips
1/2 pound green beans, ends snapped off and cut into pieces
1 large zucchini, cut into strips
FOR THE MARINADE:
3 cloves garlic, crushed
1 cup safflower oil
1 3/4 cups wine vinegar
1/3 cup sugar
2 teaspoons salt, or to taste
2 teaspoons dry mustard
Freshly ground black pepper to taste

Put vegetables into a refrigerator container with a cover.

Mix all marinade ingredients and pour into container with vegetables. (This will probably not cover all the vegetables.)

Marinate for at least 48 hours, stirring once or twice.

Serves 8
