Recipe: Oatmeal Scotchies Pan Cookies (using butterscotch chips)

OATMEAL SCOTCHIES PAN COOKIES

1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups oats, uncooked (Quick or Old Fashioned)
1 (12 oz.) pkg. (2 cups) Nestle butterscotch flavored morsels

Preheat oven to375 degrees F.

In small bowl, combine flour, baking soda, salt and cinnamon; set aside.

In large bowl, combine butter, sugar, brown sugar, eggs and vanilla extract; beat until light and fluffy. Gradually add flour mixture Stir in oats and butterscotch chips. Spread in a greased 15x10x1-inch baking pan.

Bake in a 375 degree F oven for 20-25 minutes. Cool, then cut in 2-inch squares.

Makes 35 (2-inch) squares
