Recipe: Holiday Truffles

I have not made this recipe, but it sure makes a lot. I think with this recipe I would use real peanut butter and skip the whole melting of the peanut butter chips. Then in order to make these easier to handle I would add a cup or more of graham cracker crumns. I would still dip them in melted chocoalte chips though. They kind of sound like Buckeyes, which in my opinion are the greatest! I have a recipe if you like. It does not have canned frosting in the recipe, but they are basically like eating Reese's peanut butter cups. Let me know. Now I have to go eat a teaspoon of peanut butter, my stomach is growling!

Holiday Truffles

Two packages (12 ounces) peanut butter chips
1 can of white frosting
1 can of chocolate frosting
1 package (12 ounces)semi-sweet chocolate chips

Melt peanut butter chips in medium saucepan over low heat, stirring constantly; remove from heat. Stir in 2 cans frosting; blend well. Refrigerate one to two hours or until firm.

Melt semi-sweet chocolate chips in top of double boiler. Scoop chocolate mixture into 1-inch balls. Mixture will be sticky. Dip in melted chocolate chips. Place in foil candy cups, if desired. Store in refrigerator.

Recipe makes 144 candies.
