Recipe: Mrs. E.'s Creamy Pralines (1960-70's)

MRS. E.'S CREAMY PRALINES

2 cups granulated sugar
1 cup light brown sugar
1 (5 1/2 ounce) can evaporated milk (2/3 cup)
1/2 cup milk or light cream
1/2 teaspoon salt
5 tablespoons butter or margarine
5 tablespoons light corn syrup
1 teaspoon vanilla flavoring
2 cups pecan halves

Mix all ingredients except flavoring and pecans in a saucepan. Place over low heat and cook to 236 degrees F (soft ball). Stir frequently during cooking to prevent sticking.

Remove from heat and let stand five minutes without stirring. Add flavoring and beat until it loses its gloss. If candy appears to be curdling, he beating will clear it.

Add pecans and drop from a tablespoon in patties onto waxed paper. Let stand until cold.

Note: If mixture becomes too hard to drop, set pan in hot water to soften a bit.
