Recipe: Pineapple Pancakes (using crushed pineapple and coconut, 1960's)

Breakfast and Brunch
PINEAPPLE PANCAKES


1 1/2 cups sifted flour
1 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup coconut
1 egg, beaten
1 1/3 cups milk
1 cup undrained crushed pineapple
2 tablespoons melted butter
FOR SERVING:
Vanilla ice cream
Sweetened sliced strawberries

Sift dry ingredients into bowl. Add next 5 ingredients and mix well.

Bake on hot greased griddle, using about 1/4 cup batter for each pancake.

Put ice cream between 2 pancakes and top with berries.

Makes 6-8 servings
