Recipe: Oatmeal Cinnamon Muffins (using brown sugar and oil)

OATMEAL CINNAMON MUFFINS

1 1/3 cups flour
3/4 cup quick-cooking rolled oats, uncooked
1/3 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup oil
3/4 cup milk
1 egg, slightly beaten
1/2 cup raisins (optional)

Heat oven to 400 degrees F. Lightly grease 12 muffin cups in muffin pan with butter.

In large mixing bowl, combine flour, rolled oats, brown sugar, baking powder, salt and cinnamon. Mix briefly with a fork to combine dry ingredients.

Add oil, milk and egg. Mix wet ingredients together with dry ingredients with your fork. When completely mixed, add optional raisins and stir in. Divide batter evenly among muffin cups.

Bake in preheated oven 15 to 20 minutes or until muffins are golden and a toothpick inserted into center of muffins comes out clean. Let muffins cool in pan briefly on top of stove or on wire rack. Muffins should come out easily, but you might need to run a knife around the edge of each cup. Serve warm.

Notes: Remember not to overmix or beat the ingredients at any stage - stir only to moisten and combine; batter will be lumpy.

Makes 12 muffins
