Laura.Anne.,.KS (09:39:47) : Mini Chicken Kabobs

2/3 cup plain yogurt
1/4 cup lime juice
3 ea. chicken breasts ,skinned and boned
1/4 cup Dijon mustard
1 ea. selection of salad leaves
1 ea. lime wedges for garnishes

In a bowl, combine 3 tablespoons of yogurt with the lime juice. Cut the chicken breasts into 1 inch cubes and mix into the yogurt and lime mixture. Cover and leave to make a basting mixture. Heat the broiler to medium. Remove the chicken from the marinade and thread the pieces onto small skewers that have been soaked in water for ten minutes to prevent the skewers from burning. Grill the kabobs on one side for 5 minutes . Turn, baste generously with the mustard mixture and broil for a further five minutes. Increase the heat to high, turn the kabobs once more, baste again and broil for 5 minutes more, or until the chicken is cooked. Serve with a selection of salad leaves and garnish with lime wedges.

You can always rally last minute and serve "fish pastries" by keeping a can of tuna or crab on the shelf or a bag of small shrimp in the freezer, making a salad of the fish with either soy sauce or Worcestershire sauce to spike it and serving either cold on crackers or mini party breads or broiling briefly till just bubbly. I would always provide some fruit as well, either whole or as a drink to balance and keep the palette clear for the meal to follow.

calliope,.NY (05:41:07) : SICILIAN OLIVE SALAD...with an idea

Make a cold salad and but serve at room temperature after its marinated a few hours or overnight, of very thin slices of sweet red peppers, celery, pitted green and black olives sliced in half, some capers, garlic and thin slices of onion in olive oil with either fresh anchovies or paste, if you hate their hairy little bodies, or forget the anchovy altogether! ..and finish with vinegar of choice and/or some lemon juice and chopped fresh oregano and Italian parsley.

IDEA...if you slice/or chop these ingredients small enough, you can use them to make Bruschetta by toasting the bread slices lightly, laying a bed of this salad on, topping with Mozzarella or Provolone or Fontina...or cheese of choice and then broiling, just till the cheese melts. Serve with a plate of fresh fruit as well...even if its just apples!

36-48 shrimp...sauteed till barely done...in 1/3 cup olive oil
Add, immediately, a mixture of;
2-3 Tbsp. fresh chopped rosemary
4-cloves, finely minced garlic
1/2-cup dry white wine
1/4-cup fresh lemon juice
black pepper, to taste

Bring back just to the boiling point...remove, immediately
Put into a glass or ceramic bowl. Serve right away or you can refrigerate over-night and serve at room temp. the next day..

Serve with crusty bread, toasted..cubes of mild cheese such as chevre, fontina or even the lovely salty feta and fruit(i.e....grapes, apples..melon.

Baked Brie with Cranberry Sauce

1 (12 oz.) package fresh cranberries...or you could use, blueberries!
3/4 cup firmly packed brown sugar
1/3 cup currants
1/3 cup water...I would use orange juice
1/8 tsp. dry mustard
1/8 tsp ground ginger
1/8 tsp. ground cardamom
1/8 tsp. ground allspice
1/8 tsp. ground cloves
1 round Brie (35 ounces)

Method:
Combine the first 9 ingredients in a medium saucepan. Cook over medium heat, stirring
constantly, 8 minutes or until cranberry skins pop. Mash, set aside, and let cool. Remove rind from top only, of the Brie, cutting to within 1/2 inch of outside edges. (In other words...leave a rim to contain the cheese from melting to a puddle!) Place cheese on a baking sheet and spoon cranberry mixture over top of Brie. Bake at 300 degrees for 20 to 25 minutes or until cheese is softened, but not melted. Transfer cheese to a serving platter and garnish, if desired. Serve with assorted crackers.
I like Stoned Wheat crackers for this.

Serve with fresh orange slices....or with Mimosas or Screw Drivers for a party since orange balances Brie very nicely!!!

calliope,.NY (05:22:05) : GREEN BEAN, ETC SPREAD.especially good with CREAM OF TOMATO SOUP

1/2-bag frozen green beans...simmered till soft, about 10-15 minutes
1-small can cannelini beans, rinsed and drained...or double the green beans
1-cup, toasted, walnuts
1/4-cup red wine
juice of one lemon
1-Tbsp. Nance's Sharp and Creamy Mustard...or mustard of choice.
1/4-cup chopped fresh Italian parsley
1-tsp. dry Summer Savory
a good grating of fresh nutmeg
cayenne pepper, to taste
salt and fresh cracked black pepper to taste
...process in a food processor and blend in;
1/4-cup mayo of choice
1-small, red onion, minced...use scallions if you prefer

optional...2-4 hard boiled eggs

Puree all but the minced red onion in the food processor till smooth. then add the onion.
Spread this on toasted Italian or French bread.

l can whole kernel corn
1 can cream style corn
1 (8oz) ctn. sour cream
1 box corn muffin mix
2 eggs
1/2 C. melted butter
1/2 C. cheddar cheese-grated
2 T. chopped green chilies

In large bowl mix all ingredients except cheese. Stir well. Pour into a 2 qt baking dish and top with cheese.
Bake at 350 degrees for 35-40 min.
Serves 12

MONKEY BREAD

Chopped nuts
4 cans biscuits
2/3 cup sugar
1/2 t. cinnamon

Cut biscuits into quarters. Put all in plastic bag & mix well. Put
some chopped nuts in bottom of
greased bundt pan.

1 1/2 sticks margarine
1 cup sugar
1 1/2 t. sugar

Melt margarine, 1 cup sugar and 1 1/2 t. sugar together. Boil 2 to 3
minutes. Pour mixture over
quartered biscuits which have been placed in bundt pan. Bake 30
minutes at 350 (or until golden
brown).

Cool 10 minutes before turning out on plate.

CRUSHED PINEAPPLE PIE

16 oz Can of crushed pineapple (drained)
1 Can Eagle Brand milk
1 Large container (8oz) Cool Whip
1/4 Cup lemon juice
2 Graham Cracker pie crusts

MIX INGREDIENTS TOGETHER AND POUR INTO 2 GRAHAM CRACKER PIE CRUSTS.

REFRIGERATE.

FANCY FRUIT SALAD

1 large can sliced peaches, drained
1 large can pineapple chunks, do not drain
1 10 oz. pkg. frozen strawberries, thawed
3 large bananas, sliced
1 small 3oz box vanilla instant pudding
2 Tbs. Tang (optional)

Place fruit in bowl. Sprinkle pudding and Tang on top and mix gently.
Refrigerate.

SWEET POTATO CASSEROLE

1 Can sweet potatoes drained and mixed with mixer
3/4 cup sugar
1 egg (beaten)
1/2 stick margarine (melted)
1/4 cup milk
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Mix well and place in baking dish and bake 20 minutes at 350

TOPPING

1/2 cup crushed corn flakes
1/4 cup chopped nuts
1/4 cup brown sugar

Bake an additional 10 minutes

GRAHAM CRACKER PUDDING

1 lg box instant vanilla pudding
8oz container of cool whip
4 cups of milk
graham crackers

Prepare pudding per directions. Gently fold in the cool whip. Layer
your dish with the graham
crackers and pudding until all the pudding is used up.
(You can use cool whip lite, skim milk and low fat graham crackers for a
very low fat dessert.)

CORN CASSEROLE

1 cup creamed corn
1 cup whole kernel corn
1 stick margarine
1 cup sour cream
1 Jiffy cornbread mix

Melt margarine in casserole. Mix remaining ingredients together. Pour
in casserole. Bake 1 hour at
400.

TACO POTATOES

Potatoes
Ground Beef
Jar of taco sauce
Cheese Whiz (Jalapeno or regular)
Hot pepper rings
Sour Cream

Wash potatoes. Cut in half lengthwise. Rub potatoes with cooking oil.
Microwave in covered
baking dish until done.

Cook ground beef and drain oil from it. Mix taco sauce with hamburger.

Spoon hamburger mixture on top of potato halves.
Top with pepper rings.
Spoon on Cheese Whiz.

Microwave until cheese melts, then top with sour cream.

You can serve with tortilla chips.

CHEESECAKE DIP

Great for apples or strawberries.

3 oz cream cheese
2 Tbs. Sugar
2 Tbs. Milk
2 cups thawed Cool Whip
1 tsp. vanilla

Beat cheese, sugar and milk until well blended. Fold in Cool Whip and
vanilla. Refrigerate.

I have made spiders for Halloween using the Jello jiggler recipe and grape Jello for the spiders. Cut two circles, one larger one for the body and a smaller one for the head. Attach them with a piece of licorice rope and use the same for legs. If you have a round ice cube tray, you could make red lady bug jigglers and decorate with licorice and tiny little legs.

BURGER BITES(a cookie that looks like a hamburger and no baking)

Few drops water
1 drop green food coloring
1/4 cup flaked coconut

In a small jar or baggie combine a few drops of water and the green food coloring. Add coconut and shake until all the coconut is tinted. Set aside

48 vanilla wafers
24 peppermint patties (the small ones)

Turn oven to 350 degrees, Place half of the vanilla wafer, flat side up on an ungreased cookie sheet. Top each with a peppermint patty. Place in oven about 1 minute or just until chocolate begins to soften. Sprinkle each with 1/2 teaspoon tinted coconut. Top with another vanilla wafer. Press gently.

Water
Sesame seed or Poppy seeds

With a clean paint brush or your finger brush the top of vanilla wafer with just enough water to moisten so that the sesame seeds will stick. and sprinkle each cookie with sesame or poppy seeds.

To make them really look like hamburgers, you can ask your local McDonald's or Burger King for the little French fry bag and put them in there. Kids Love Them.

1 refrigerated pizza crust/homemade pizza crust
olive oil
4 cloves garlic minced
mozzarella cheese (2 c per pizza)

Place minced garlic in olive oil (about 1/4 to 1/2 c) for 30 min. Place crust in pan. Brush crust with olive oil and garlic mixture. Cover pizza with cheese. You can add grated Parmesan if desired. Bake till cheese is melted (15-20min.)

1 can Hormel chili with beans
1 package cream cheese softened
1 small onion minced
Jalapeno pepper slices
crushed red pepper flakes
2 c grated cheddar with taco seasonings

Spread softened cream cheese over bottom of pie plate. Mix together chili, onion, jalapeno slices to taste and crushed red pepper to taste. Spread over cream cheese. Top with cheese. Bake at 350 for 20 to 30 min. Serve with Doritos.

Pizza Dip

1 large can crushed tomatoes
1 stick sharp cheddar cheese, shredded
1 to 2 tbsp dried oregano
Doritos

In a saucepan over low heat mix tomatoes, cheese and oregano(start with one
tbsp and add more if necessary)
When cheese is melted it's done. Serve with Doritos. Kids love it.
