Recipe(tried): Roasted Flounder with Artichokes - I have made this several times, and it is wonderful!

Main Dishes - Fish, Shellfish
It originally caught my eye because I had some flounder in the freezer and nobody was that fond of it, having eaten one meal of it already.

This recipe is so good it even made the flounder delicious!

I used marinated artichoke hearts (lots the first time, because I had them, but the subsequent times I just used the little jar you sometimes find at the dollar store, or otherwise at a regular store for not much more than that). Otherwise, I pretty much used the amounts and ingredients as listed.

I will not buy flounder again (too soft for us), but this is a fast and fancy method for any white fish you have handy. Good enough for company, I say!
