Recipe: Pasta all'Amatriciana (Pasta with Chile-spiked Sauce)

PASTA ALL'AMATRICIANA
(PASTA WITH CHILE-SPIKED SAUCE)


1/1/2 to 2 tablespoons olive oil
4 ounces pancetta, cut in fine strips
1 small dried red hot chile
1/2 medium onion, finely sliced or chopped
3/4 pound peeled tomatoes, chopped
Salt, to taste
10 ounces pasta, such as bucatini or spaghetti
Abundant grated pecorino Romano cheese, to taste

Warm olive oil over low heat. Stir in pancetta and saute about 5 minutes.

Add whole chile and continue to cook until pancetta is browned. Add onion and cook until golden.

Stir in tomatoes and cook until sauce thickens. Just before serving, season to taste with salt and remove the chile.

Meanwhile, bring large pot of salted water to boil, add pasta and cook until it is al dente. Drain, mix right in the pan with the sauce and toss well. Let pasta rest in the warmed sauce a minute before serving with plenty of grated cheese.

Makes 4 servings
