Recipe(tried): Danish Potato Salad

Salads - Potato, Pasta
Tonight we are having chicken breasts sauteed in olive oil with rosemary and white wine and danish potato salad. I love the dressing on this salad.

DANISH POTATO SALAD DRESSING

Cook together in a small saucepan:

1/4 c vinegar
1/4 c. water
1/4 c. sugar
1/4 tsp salt
dash of pepper
1 tsp prepared yellow mustard
2 well beaten egg yolks

Cook until thick. About 5 minutes. I cook mine in the microwave.

Cool 10 minutes.

Add

1 cup of Miracle Whip. Mix well.

Pour over diced potatoes, several hard boiled diced eggs, salt and pepper. Chopped green onions and celery can be added also.

Chill!
