Recipe(tried): Carne Asada with Salsa and Zesty Pinto Beans... Monday's Dinner

You know how much I rave about those Publix Apron meals...I went into Publix on Monday to do my groceries fuly intent on making a lasagna for dinner when the delicious aroma of the meal the lady was making was too tantalizing for me to ignore...I tasted and I was hooked! This is a very easy way to make carne asada using thinly-sliced top round steak. I bet this meat would be good in a sub roll too! It was seasoned in the pan and then a lime was squeezed on the meat making it sizzle and turn a nice brown sort of like fajita meat. I served it on a serving of rice surrounded by the pinto beans and a small salad on the plate topped with fresh salsa and avocado bits!

DH loved the meal. It only took 25 minutes to make and was very econimal to make, the meat package just cost $3.25. I did get to make the lasagna tonight and I will post that recipe after this one.

For dessert, we enjoyed Dulce de Leche Sugar-Free pudding by Jell-O which reminded me of Flan, it was very good! DH thought it tasted like Butterscotch!

It was a delicious meal!

CARNE ASADA WITH SALSA AND ZESTY PINTO BEANS
serves 4
source: Publix Apron Meals

1 lb. thin-sliced top round steak
2 tsp. minced garlic
2 tsp. Sazon Complete Seasoning (in Spanish food section)
2 Tbsp. extra-virgin olive oil
1 lime, for juice
1 avocado
1/2 cup fresh salsa
6 to 10 sprigs of fresh cilantro for garnish

(My addition...small handful of Spring Salad mound on each plate)and make a package of yellow rice.

Preheat large pan on med-high, 2-3 minutes. Rub both sides of steak with garlic and seasoning.

Place oil in pan, swirl to coat, add steak. Cook 3-4 minutes on first side until nicely browned. Squeeze juice of one-half lime over steak, turn steak on second side and brown well. Squeeze remainng lime juice over steak.

Meanwile, cut avocado into quarters, then into bite-size pieces. Place a small handful of Spring Mix salad on each plate, top with fresh salsa and avocado bits. Mound a serving of rice in middle of plate, put steak on top of rice and surround it with a serving of pinto beans.

Garnish top with minced fresh cilantro.

ZESTY PINTO BEANS
makes 6 servings

2 (15.5 oz.) cans pinto beans, drained
1 (8 oz.) can tomato sauce
1/2 cup diced onions
2 tsp. minced garlic
1/2 tsp. Complete seasoning Sazon
2 Tbsp. olive oil

Saute onions and garlic in olive oil, when golden, add beans, tomato sauce and seasoning. Cook 7-9 minutes
stirring occasionally until thoroughly heated.

I made it a little differently...did not drain, squirted about 1/3 cup ketchup instead of tomato sauce.
