Recipe(tried): Kentucky Crunch French Toast
Breakfast and BrunchKENTUCKY CRUNCH FRENCH TOAST
(Renal Diet Friendly)
4 eggs, slightly beaten
5 Tbsp. sugar, divided use*
3/4 cup liquid non-dairy creamer**
1 tsp. vanilla extract
6 slices white bread (not whole wheat/whole grain)**
1 1/2 cups Corn Flakes, slightly crushed
3 Tbsp. no-salt margarine
3 Tbsp. ground cinnamon
Mix the eggs, 2 Tbsp. sugar, non-dairy creamer and vanilla in a shallow dish or pie pan. Soak the bread in the mixture until soft, turning once.
In another large shallow baking dish spread the corn flakes, then coat all the soaked bread slices with corn flakes on each side.
Add the margarine to the skillet or frying pan and cook the bread slices over medium high heat, turning to brown on each side.
Mix cinnamon and the remaining 3 tablespoons sugar together in a separate bowl. Sprinkle over top of slices and serve.
*To make this recipe diabetic friendly, substitute Splenda for the sugar.
**If you are not preparing it for anyone that has kidney (renal) problems then you can substitute milk for the non-dairy creamer and whole grain bread for the white.
