Recipe: 2 No Bake Fruitcakes with Vanilla Wafers

Here are a couple recipes that I haven't tried, but they look very similar to the graham cracker-based no-bake fruitcake recipes that we're all familiar with. I'm sorry that I don't have a source for these, but I suspect they originated as or are variations of holiday promotional recipes from Nabisco and/or Eagle Brand.

Ice Box Fruitcake

Mix together well:
1 (14 oz.) can sweetened condensed milk
12 oz. box vanilla wafers, crushed
8 oz. candied cherries
8 oz. canned mixed fruit
2 cups pecans, chopped
2 cups coconut
1 cup raisins

Prepare a glass dish or loaf pan with a light coating of cooking spray or lightly butter. Pack mixture evenly into prepared dish. Cover and refrigerate - let harden before slicing; store in refrigerator.

No Bake Fruitcake

Combine in a large bowl:
1 (8 oz.) bottle maraschino cherries, drained and chopped
1 lb. dates, pitted, chopped
4 cups chopped pecans

Stir in:
1 can (3 1/2 oz.) flaked coconut
1 lb. vanilla wafers, crushed
1 cup raisins or 1 cup chopped candied pineapple (green & red)

Pour in and mix together thoroughly:
1 (14 oz.) can sweetened condensed milk

Prepare a glass dish or loaf pan with a light coating of cooking spray or lightly butter. Pack mixture evenly into prepared dish. Cover and refrigerate - let harden before slicing; store in refrigerator.
