Recipe(tried): Answer to what is baker's ammonia really used for in baking?
Tips and Tricks - CookingAnswer to the question about the Baker's Ammonia in baking. Baker's Ammonia takes place of the baking powder in most recipes like my Grandmothers Ammonia Cookies that she always made at Christmas. I now hold up the tradition, and keep on baking. The Christmas Cookies also calls for anise extract (that is licorice flavor) instead of vanilla extract. You can take a sugar recipe and just add Baker's Ammonia instead of baking powder. And you can add the anise extract instead of the vanilla, as simple as that. These days you can only buy the Baker's Ammonia from one of the older drug stores. It is in the price line of $3.50 an ounce, unless you can find a deal when you buy the whole jar. Good luck if you bake these cookies, they stay soft longer made with the Bakers Ammonia too.
