Recipe: Brewed Awakenings Walnut Buttermilk Waffles (10 servings)
Breakfast and BrunchBREWED AWAKENINGS WALNUT BUTTERMILK WAFFLES
7 large eggs
1 cup whole milk
2 cups reduced-fat buttermilk
3/4 cup vegetable oil
4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon baking powder
1 cup walnuts
1/2 cup granulated sugar
1 cup packed brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
real butter and real maple syrup (for serving)
Crack eggs into large mixing bowl. Add milk, buttermilk and oil. Whisk mix with great intensity for 1 minute, infusing as much air as possible to the mixture.
Now add wet ingredients to large bowl containing flour, salt, baking soda and baking powder. Mix only until all is wet - lumps will remain. That's OK and good. Set aside.
In food processor, quickly blend walnuts, sugars, cinnamon and nutmeg. Process until nuts are minced up real good. Fold nut mixture into egg mixture, then stop. Remember - lumps are good.
Use your grandmother's waffle iron for best results. Prepare as directed by waffle iron manufacturer.
Serve hot with real butter and real maple syrup.
