Recipe(tried): Baked Sweet Potatoe with Apple and Cinnamon (serves 2)

BAKED SWEET POTATO WITH APPLE AND CINNAMON

olive oil cooking spray
1 large sweet potato, peeled, sliced into 1/2-inch thick rounds
1 large apple, cored, sliced into rounds
olive oil
cinnamon

Preheat oven to 450 degrees F or grill to medium-high.

Coat a sheet of aluminum foil (large enough to wrap the sweet potato and apple together) with cooking spray.

Alternate slices of sweet potato and apple on prepared foil. Drizzle with olive oil and sprinkle with cinnamon. Wrap tightly, folding edges to seal.

Bake 25 to 30 minutes on a cookie sheet in oven or grill about 30 minutes or until sweet potatoes are tender.

Place foiled food in a bowl and bring to the table for side dish with chicken, pork, beef or fish.

Good with cucumber-onion salad and vinaigrette dressing.
