Recipe: Grab-Your-Girdle Garlic Smashed Taters

Side Dishes - Potatoes
GRAB-YOUR-GIRDLE GARLIC SMASHED TATERS

6 medium Yukon gold potatoes
10 to 15 garlic cloves, peeled
Coarse salt and cracked pepper (to taste)
6 tablespoons unsalted butter
1/4 cup heavy (whipping) cream

Peel the potatoes and dice into 1-inch pieces. Place the potatoes in a medium stockpot. Cover with water and season with salt and pepper. Add the garlic cloves and simmer for 20 minutes or until the potatoes are very tender. Drain the water from the pot and return the pot to the stove over low heat.

Shake the potatoes, allowing the excess water to steam away. When the potatoes begin to whiten around the edges, remove from heat.

With a potato masher, smash the potatoes and soft garlic cloves together. Add the butter and cream, stirring vigorously until slightly smooth, allowing some of the chunky potato texture to remain. Season to taste with salt and pepper.

Makes 8 servings
