MIXED GREENS AND ASPARAGUS SALAD
2 1/2 pounds organic jumbo asparagus
7 tablespoons organic extra-virgin olive oil
4 tablespoons fig balsamic vinegar
1/2 cup organic apple juice
1 teaspoon coarsely ground pepper
1 tablespoon fresh chives, snipped
1 tablespoon fresh tarragon, chopped
6 cups mixed organic salad greens
1/4 cup fresh Parmesan, grated (for serving)
Preheat oven to 375 degrees F.
Wash asparagus in cold water. Drain and trim off tough stalks. Toss asparagus in 2 tablespoons oil and black pepper. Place on baking sheet and bake for 15 minutes. Keep asparagus crisp.
Whisk together 5 tablespoons oil, vinegar, apple juice, pepper, chives and tarragon.
Remove asparagus from oven and toss in dressing to coat.
On individual salad plate, place asparagus on top of mixed salad greens. Spoon remaining dressing over each salad. Sprinkle with Parmesan cheese.
