BANANA CAKE
1 1/4 cups white granulated sugar
1/2 cup (1 stick) butter or margarine
1/2 teaspoon ground nutmeg
2 eggs
1 cup mashed ripe bananas (2 to 3 medium)
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup chopped nuts
Cream Cheese Frosting (recipe follows)
Cream together sugar, butter, and nutmeg until fluffy. Add eggs, one at a time, beating well after each addition. Stir in bananas and vanilla; set aside.
Combine flour, baking powder, baking soda and salt. Beat into creamed mixture alternately with buttermilk. Stir in nuts. Spread batter in greased 13x9-inch pan.
Bake in 350 degree F oven 30 to 35 minutes or until cake tester inserted in center comes out clean. Cool on rack.
Frost with Cream Cheese Frosting.
CREAM CHEESE FROSTING
4 cups powdered sugar
3 tablespoons milk
1 (3 oz.) pkg. cream cheese, softened
1/4 cup (1/2 stick) butter or margarine, softened
1 teaspoon vanilla
Combine all ingredients for the frosting and beat until smooth.
Makes 1 (13x9-inch) cake, 12 servings
