Recipe: Banana-Orange Softies with Orange Icing (cookies)

BANANA-ORANGE SOFTIES

2 cups flour
2 cups uncooked oats
3/4 tsp. baking soda
1/2 tsp. ground nutmeg
1 2/3 cups mashed ripe bananas (about 3)
3/4 cup margarine, softened
1/2 cup orange juice
2 eggs
2 tsp. vanilla
1 tsp. grated orange peel
3/4 cup raisins
Orange Icing (recipe follows)

Heat oven to 350 degrees F.

Combine flour, oats, baking powder and nutmeg; set aside.

Combine bananas, margarine, and orange juice. Blend in eggs, vanilla, and orange peel. Add combined dry ingredients and raisins; mix well. Drop by rounded tablespoonful onto greased cookie sheet.

Bake 20 to 22 minutes, or until light golden brown. Cool 1 minute on cookie sheet; remove to wire cooling rack.

Drizzle Orange Icing over cooled cookies. Store in tightly covered container.

ORANGE ICING

3/4 cup powdered sugar
4 to 5 tsp. orange juice
1 tsp. grated orange peel

Combine powdered sugar, orange juice, and peel.

Makes 22 cookies
