Recipe(tried): Basque Fresh-Tuna Stew

SPANISH...MARMITAKO [BASQUE FRESH-TUNA STEW]

1 medium onion, chopped
1/4 cup olive oil
1 pound fresh tuna, in large pieces (if unavailable, use swordfish)
2 garlic cloves, minced
1/4 cup chopped parsley
2 tomatoes, peeled, seeded, and diced
2 raw large potatoes, peeled and cubed
1/4 pound peas, shelled
1/2 cup beef bouillon
1 red pepper or canned pimiento, diced
1 bay leaf
Dash of cayenne
Salt and pepper
Toast triangles

Saute onion in hot oil until golden. Add fish and saute for a few minutes. Add garlic, parsley, and tomatoes; saute. Add potatoes, peas, bouillon, diced pepper, bay leaf, and cayenne. Simmer, covered, about 1 hour. Season with salt and pepper to taste. Serve, garnished with toast triangles. Makes 6 servings.
