Recipe: Beef Pot Roast, Awesome French Dip Sandiwches, Hot Roast Beef, Classic White Bread (Bread Machine)

This is a three day beef menu. It is NOT low in fat or salt but I am sure it can be modified to suit many diets. This is meant for two adults and one child or so. Modify ingredients for family size.
From My House to Yours...

SHOPPING LIST
Rib-Eye or Rump Roast-whichever you want, Rib-eye is more tender but more expensive
8 medium baking potatoes or for extra flavor, Red potatoes
1-2 LB carrots (You may want to add more)
1-2 heads of cauliflower, depending on size
1 large white onion
1 pakg pot roast in bag seasoning
10 pkg Au Jus- At least 1 pkg per 2 people of Lawrys brand or other high quality brand. The other can be any off-brand.
5 pkg brown gravy
1 loaf Wonderbread or fresh white bread
1 pkg Columbo, sourdough
1 small onion for french dips
sliced cheese of choice
Decide what to serve with french dips and buy it

BEEF POT ROAST
6 LB Rib-Eye or Rump Roast
8 med. Potatoes-skin on or off-your choice, cubed 1-1/2 inches
1 LB Carrots, sliced
1 large head Cauliflower or two small ones, cut up in less than 1-1/2 inches
1 large onion (optional)sliced and slivered
1 pkg pot roast in bag seasoning (no use for bag)
1-2 pkgs onion soup mix
3 pkgs Au Jus
3 pkgs Brown Gravy

Mix all packages EXCEPT onion soup with 6 cups of water. Taste it, I like mine strong but you may want to add more water. Put wire rack (optional) in bottom of large round roasting pan with lid. Put roast on it, then put all veggies in pan, cauliflower in the bottom. Pour juice over top of all of it. Sprinkle with freshly ground or regular black pepper to taste (I like mine more spicy). DO NOT SALT. * Note: this roast is not meant to be used in a low sodium or fat diet. It is loaded with salt. Sprinkle top of roast and veggies with onion soup mix-open a new one if you need to but don't over use it-save the leftovers for another time. Bake in pre-heated 325 degree oven at 2-3 hours, depending on how rare you like it. Use a meat thermometer.

AWESOME FRENCH DIP SANDWICHES
2-4 pkgs "Lawrys" brand Au Jus, It is worth the search for this brand or another good quality brand (I do not care for generic brands much with this dish, nor do I like Schilling brand).
Thinly sliced Roast
One package Sourdough sandwich rolls-I prefer "Columbo" brand as it does not fall apart so easily
Swiss, cheddar or Jack cheese-your choice for cheese or not
Saut ed onions (optional). Grab some out of the roast for the best flavor.
Butter rolls and toast in toaster oven or oven with cheese if you opt for it and onions.
AT THE SAME TIME
Two options: Use the roast juice for dipping OR:
Heat Au Jus in saucepan, halving the recipe-it calls for 2 C water, use 1 C, etc.
When Au Jus or Roast juice is ready, turn burner off or the beef will become tough, take some metal tongs and dip the roast in a couple of slices at a time, quickly, just to heat and set on open faced toasted bread.
Close bread and slice diagonally. Pour Au Jus into small cups or dipping bowls.
Serve this with Potato chips or frozen fries, potato wedges or tator tots. Salad or cold sliced veggies with dip of choice goes nicely.

HOT ROAST BEEF
Slice roast beef a little thicker for this-1/8 to is best. Take potatoes and cauliflower and mash together-optional, you can just mash the potatoes if you want. Add a little margarine and milk to make it creamy if you desire. Cook the mashed potatoes in the microwave or on the stove. Heat carrots (and cauliflower) in the juice of the roast, if there is some left (this is why I make this with a lot of juice). If there is not any juice left, use the leftover Au Jus or heat in microwave. Use roast juice to make gravy. If there is a lot left, just add a thickener like cornstarch or flour. If there is none left or a little. Make some Brown gravy from a package, at least 1 cup per person. Lightly fry in non-stick pan sprayed with or without non-sitck spray. Put a slice or two on top of each slice of white bread, two slices bread per plate per adult, one per child (recipe follows for those with bread machine, otherwise, use Wonderbread-soft white bread is best. Pour gravy on top of bread/beef and potatoes and serve with carrots on the side.
*If there is anything left over after this:
Gravy: freeze in freezer bags for beef stew or soup stock, you can even purree the veggies if you like with it for thickener
Veggies: freeze for soup but potatos will get soggy when thawed.
Meat-makes great lunch sandwiches or if you are tired of it, chop it in small pieces for a quick soup later.

CLASSIC WHITE BREAD
2 LB LOAF

1 1/8 cups Water
3 cups Bread Four
1 1/2 tbsp Dry Milk
2 tbsp Sugar
2 tsp Salt
2 tbsp Butter/Margarine
3 tsp Active Dry Yeast

Load it according to manufacturers directions and use basic light crust.
